Editor's Note

It is Istanbul's oldest surviving patisserie, in continuous operation since its founding in 1923. Its founder, Filip Lenas, emigrated to Istanbul from Epirus at the age of 16 and learned the trade as an apprentice in a chocolate workshop opened by the French. Although the Karaköy branch opened in 1925 and 1928 closed in 1992 and the Beyoğlu branch in 1967, the Kadıköy branch opened in 1961 by Filip Lenas's younger son Mihal Lenas is still in operation. In the 1950s and 1960s Baylan was a gathering and debating place for literary and artistic circles. The elder son, Harry Lenas, took over the business after training in patisserie.
